If you have never tried Japanese Soba(buckwheat noodle), your first Soba should be here. What determines the taste of Soba are buckwheat seeds and water. Shinshu (Nagano Prefecture) is famous for Soba. It is also grown near the restaurant. And the water used is spring water that comes from years of snowfall on the Yatsugatake Mountains.
I find the aroma and taste of buckwheat different from the one I eat elsewhere.
It is a popular restaurant and is crowded. Please come with plenty of time to spare as the wait is long.
